12 Days of Cookies: Day 1, Shortbread Cookies

This a favorite in the Jones family.  I believe this is Matt's Grama Betty's recipe.  And it is delicious!

Shortbread Cookies (as transcribed from Matt's chicken scratch)


1 cup butter
5/8 cup (1/2 cup + 2 tbsp sugar)
2 1/2 cup flour

Cream butter and sugar.  Add flour gradually, being careful not to over mix.  Flatten dough onto cookie sheet and prick with a fork.  Bake at 325 degrees for 20 minutes, until edges are brown.
